Honey vodka recipe

A number of people wanted the recipe for the honey vodka I had on New Years. It originally came from the culinary brilliance of miss_rynn so all kudos to her :)




700 mL vodka (neither the shittest nor the best you can find. Something drinkable)
500 g honey (in retrospect, this was far too much honey for something you drink straight. Maybe half this amount for a non-mixer?)
4 sticks of cinnamon (or more, if you like)
1/2 tsp whole cloves
1 vanilla bean, cut in half and split
1 tsp almond essence

Take a large wide mouthed bottle or jar (1.5-2 L), as clean as possible. Quite frankly, you shouldn't need to sterilize it, because it should be too sweet and alcoholic for anything to grow in it, but if you're planning on long-term storage you might want to consider it. On the other hand, the cinnamon and the cloves are hardly going to be sterile, so it's not worth the bother.
Pour in the honey
Throw in the spices
Add the almond essence (if you feel like it)
Tip in all of the vodka
Shake violently, until most of the honey is dissolved
Shake once a day for about a week
Leave to steep for 2 weeks or so



I used about 250ml of honey, and found it was still pretty sweet. I might cut it back to 200ml next time. I skipped on the almond essence, I didn't think it would need it, and I didn't miss it.
